Soda Can Cupcakes


When I said easy... I meant EASY! The cupcake batter has only TWO ingredients.  I was very skeptical about this  recipe, but let me tell you- they are AMAZING!




Soda Can Cupcakes

Ingredients

1 box cake mix, any flavor(I used white)
1 can room temperature soda, any flavor(I used Sprite)

1. Preheat your oven to 350°
2. Line muffin pan with liners.
3. In a medium bowl combine your soda and cake mix, stirring with a whisk until most of the lumps are gone.
4. Fill each liner 2/3 full of batter.
5. Bake for 18-20 minutes until cupcakes are springy and toothpicks come out clean.
6. Let cool completely before frosting.


Notes:
You can use any flavor combination you would like. Coke or Dr. Pepper would be great in a chocolate cake mix. I've tried Diet Orange Crush with sugar-free cake mix and they were delicious!




Cream Cheese Frosting

Ingredients

8 oz cream cheese, room temperature
6 tbsp butter, room temperature
4 cups powdered sugar
1 tsp vanilla extract

1. Beat cream cheese and butter until smooth.
2. Add half of the powdered sugar and mix until smooth.
3. Add vanilla extract and remaining powdered sugar and mix until smooth.
4. Pipe onto cooled cupcakes.



TOPPERS


5 oz red Wilton Candy Melts

Melt candy melts in a small bowl according to package instructions.
Pour melted candy into your piping bag fitted with Wilton tip #3 and pipe words onto parchment paper.
